Art of Preserving All Kinds of Substances by Nicholas Appert (1811)

This is the first practical process of canning foods, in  which food is heated and then hermetically sealed in glass jars.  Appert won a prize of 12,000 francs from Napoleon for devising a way of preserving food for his troops.
